Release the AC system pressure. Drop the serp belt and unbolt the compressor like 3-4 bolts. The hardest part is probably removing the hard lines from the pump. They have a guide pin that can rust and really make removing the hard lines difficult. Should be able to do it all from under the car except maybe the tensioning pulley to drop the belt.
Then air filter swap, oil change etc. Everything tightened up to the correct torque etc. Oil I noticed the same as you, I filled to just under 4 litres, then let the engine idle and after this I was down to 1/4 on the dipstick, so I topped up the rest of the 4 litres and it's still not at the top of the dipstick!
Changing the oil on a VW 2.5 5 cylinder engine can be fun. The most unique aspect of these engines is the oil filter housing and replacement filter cartridge
While holding the 0.0 button below your gauge cluster down, turn on the car but not the engine. Keep pressing the 0.0 until it prompts to reset the Service notification. It will first show the Oil notification and then if you keep holding show the Service/Inspection notification. Release the 0.0 button and press it again once it shows the It just happened to be what my shop had in stock when I checked my fill level. I really like Pentosin producs for oil, so when it comes time for a change I'll probably use FFL2. Liqui-Moly stuff is awesome so I don't have any worries using it. Currently using Liqui-Moly engine oil, and next service will be Pentosin.
I realize this is an old thread but here is my experience for a Golf MK7 TSi manual (2015). The drain plugs required a 17mm hex bit to remove and not 10mm. Only about a quart and half of fluid drained out - I was expecting over 2 qts. Before anyone asks, yes the car was level & engine warm.
Make sure you are using oil that meets the required spec. As per the owners manual you can use 5w-30 or 5w-40 but the oil must meet the required Volkswagen Spec of "VW 502 00". 2 weeks ago driving down the highway and the low oil light pops on, pull the dipstick and it shows to be 1qt low (bottom of the crosshatch marks), I was anticipating my oil change at the 40k point so I added 3/4qt and continued on. I assumed the dealership maybe skimped during the oil change perhaps.
Start the car and run through the gears on the ramp and back into P, let the car run and using VCDS monitor the gearbox temp until it gets to 35deg, then remove the bung and drain. This will set the level. They just can't be bothered to do it. It's the same procedure as a dsg service only you don't drain the oil. Yes I know it can be checked
Turn on your car. Find the DRIVING TIME/DISTANCE menu. Once you get there you need to press and hold the or button on the steering wheel for about 5 seconds. Release the button and you’ll see the service mode. From there you can RESET INSPECTION or RESET OIL SERVICE.

Check the dip stick between changes to make sure you are at the proper level. Also, dirty oil is NOT an indication of how well it's lubricating. 2. Use the dealership's oil. VW has their own formula now. It used to be Castrol, the new bottles look like Mobil 1, but that's not been confirmed.
